Well everyone, it’s almost the last day of December, nearly the last day of 2011. That makes this post the last “Food for Friday” post of December, and since it happens to fall so close to the last day of 2011 .. I thought a cocktail might be appropriate? On board?
I’m not sure I’d call this ‘quick and easy’ the way I’ve themed the rest of the posts this month and I’m pretty sure we can all agree that it isn’t ‘nutritious’ like the other December posts but I’m hoping that you won’t mind that I’ve broken with the tradition to offer something really delicious and fun.
I mixed up a triple batch of this cocktail in my cocktail shaker, which is as much as it could hold, and shared with my Mum and my hubby over the holidays. Everyone agreed that it was fantastic. It’s just special enough to be honored as a Holiday cocktail, I think.
2 mint leaves
1 oz vodka
3 oz white cranberry juice
1/2 oz lemon juice
1/2 oz simple syrup (sugar and water)
whole cranberries for garnish
The first thing you have to do, if you haven’t already, is make the simple syrup. Mix equal amounts of granulated sugar and water, by volume, in a pot. I just made a bit.. half a cup of each.. and bring to a boil. Stir to make sure the sugar is dissolved and then allow to cool to room temperature.
In the bottom of a cocktail shaker, muddle the mint leaves (there isn’t a muddler at my Mum’s house so, I just took a fork and kind of mashed them around a bit). Add the vodka, white cranberry, and lemon juice. Add a few ice cubes and shake. Pour into a highball glass and add a mint leaf and a few cranberries (mine were frozen to keep the drink cold) for garnish. Enjoy!
Full disclosure, I found this recipe in a food and drink magazine that my Mum had lying around at her house but I can’t recall which one just now. My Mum lives in Niagara so there are a few places that celebrate the wines of the region along with some of the harder drinks. I apologize to the original creator for not being able to appropriately credit this fantastic drink.
