In plastic storage bag, combine curry powder, chicken, onion, carrots and bell pepper. Shake well to coat chicken and vegetables in curry powder.
In a large pan, heat oil on high. Add chicken mixture to pan and sauté until chicken is almost done, about 5 minutes.
Add broth and rice to pan. Cook until most of the broth is absorbed, about 5 minutes.
Stir in yogurt until well combined.
Garnish with cilantro if desired, and Enjoy!
