3/4of uncooked quinoa - I pick mine up at the bulk barn
1 1/2cupsof brothI use no salt added chicken broth, but you can use vegetable as well
1tspground cumin
1/2tspCayenne Pepper
1/4tspof pepperor to taste
1can of corn kernels
119oz can black beans, rinsed and drained
1/2cupfresh cilantrochopped
1tsplime juice
Instructions
Heat oil in saucepan over medium heat - cook onion and garlic until lightly browned
Add quinoa, broth, cumin, cayenne pepper, and pepper. Bring to a boil, cover, reduce heat and simmer for 20 minutes
Stir in corn and beans and continue to simmer for another 5 minutes
Mix in cilantro and lime juice - and serve!
Notes
Can be served hot or cold. Keeps well in the fridge for about 5 days. This recipe makes about 6-8 wraps - I like to top mine with cheese and salsa. You could also add a little sour cream if you like! It is sooooo good.
