Slice bacon into ½ inch pieces and cook in a frying pan over medium heat until crisp. Then remove bacon from pan and drain on paper towels. Do not discard frying pan.
While bacon is cooking, core unpeeled apple and slice into thin slices
Keeping approximately half the bacon fat in the frying pan, reduce heat to medium-low and add apples. Cook stirring often for 6-10 minutes until apples are very soft.
Add bacon and 1 Tbsp of maple syrup to apples and stir
Preheat oven to 350oF, and line a dish with parchment paper or foil.
Place brie in dish and use a skewer or fork to poke holes all over the top of the brie
Spoon the apple mixture over the top and bake for 10-15 minutes or until cheese is very soft.
Remove from oven, drizzle with remaining syrup and serve with crackers or bread.
