While it’s still nice and warm in Ontario right now the nights are getting chillier and the days are getting shorter. For our family that means switching over to our fall/winter menu. We focus on a lot of hardy warm meals for these seasons such as soups, chili and pasta dishes. A combination that comes up a lot for us is corn and sausage (I add both to our chili recipe). Fall just seems to pair nicely with these ingredients, perhaps it was the end of summer crops and the need to use leftovers that created this trend. Whatever the reason, these ‘fall flavours’ are just delightful! Which brings me back to this Fall Sausage Soup. It won me over because it’s easy to make and there is a little something for everyone. My husband likes a little spice in his food and WeeBee loves sausage. Take a look at this easy sausage and corn soup!
Easy Fall Sausage Soup
Ingredients
- 6 sausages of your choice sliced
- 1 1/2 cups cubed fully cooked ham
- 2 cups frozen corn
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- 1/2 cup chopped onion
- 6 green onions chopped
- 3 3/4 cups water
- 1 can diced tomatoes
- 1 can tomato paste
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
Instructions
- In a large frying pan cook the sausage slices over medium-high heat until browned. Drain them well and set aside.
- In a medium frying pan cook the flour in the oil over medium heat until it's golden brown, this may take about 5 min. Add in the onion and green onions and sauté until tender.
- Add the water, canned tomatoes, tomato paste, corn, ham, and spices to the crock pot. Stir in the browned sausages and onions. Turn the crock pot to low and cook for 3 hours.

This recipe serves about 11 people…or a small family with a big appetite and still some for leftovers!! We all loved this recipe, it’s carb free too which is nice. One thing I love about soup recipes is the versatility of them, you can add or remove ingredients as you wish. For recipe you could add some hot sauce to make it spicer (this one is mildly spicy so even our 1.5 yr old WeeBee enjoyed it), peppers or cauliflower for a little more vegetables or if you prefer you could add some bread for dipping or even some pasta to the mix.
