Easy Homemade Caramel Corn Recipe

Caramel Corn is one of my favorite sweet treats.  I always liked it, but it wasn’t until I tried my mother-in-law’s HOMEMADE caramel corn that I loved it.  I thought that it would be hard to make, but it turns out it is easy and delicious.
At work we are going to be watching a Christmas Movie over our lunch hour to help get us in the festive mood, and I thought bringing in Caramel corn would be a great little treat for everyone.  I will share the recipe with you so you can make it for your own family
Easy Caramel Corn
Ingredients
1 cup Butter
2 cups Brown Sugar
½ cup Corn syrup
1 tsp Salt
1 tsp Vanilla Extract
1/2 tsp Baking Soda
5 quarts Popped Popcorn (we use about ½ cup of kernels)
Directions
1. Preheat oven to 250 degrees F, and place popped popcorn in a very large oven-proof container – we use our roasting pans for this

2.  In a large saucepan melt butter over medium heat

3.  Stir in brown sugar, corn syrup and salt.  Bring to a boil stirring constantly.  Turn down heat a little, and continue to boil without stirring for 4 minutes.
4.  Remove from heat and stir in vanilla and baking soda – be careful, the baking soda will cause the caramel mixture to rise, if you have used pot that is too small it will overflow (think back to the make your own volcano experiments from grade school, only with hot sticky caramel).  I learned this the hard way, and now use my largest pot

5.  Drizzle over the popcorn, stirring to coat

6.  Place popcorn in oven, stir every 15 minutes for 1 hour – this will coat the popcorn evenly with the caramel mixture
7.  Remove from oven and allow to cool for 10-15 minutes.  At this point the Caramel Corn should still be a warm and soft enough to spoon from the container.  Transfer to an air tight container, allow to cool the rest of the way before putting the lid on.
