Holiday baking is long standing family tradition in my house.  From the days where my favourite job was licking off the spoon when we were all done, to now organizing family baking days it is easy to say that Christmas baking is full of great memories for me.  Laughter filling the kitchen, getting flour everywhere and making lots of dishes… yep these are the thing Christmas delights are made of.  While we might change up the recipes we make from year to year the joy never changes.  Christmas baking is not about being “perfect” in our house, it is about getting together during what is usually a busy time and spend a day having some fun.  I get the kids involved for as long as I can hold their attention with being helpers with measuring and adding ingredients and mixing everything together. As much as I love baking and creating tasty treats my Christmas baking days serve a dual purpose.  Not only do I bake so that my family can have some tasty treats over the holiday season but I bake so that I have goodies to give away to my local food bank and extra to take with me when we go to visit friends and family.  This year I put together over 30 bags of Christmas goodies for my local food bank to give out to their clients.  Because at this time of year everyone deserves a special Christmas cookie or two.  It is something simple I can do that helpfully will bring a smile to others this time of year.Donate Christmas Baking

And when we do venture out to visit, I never want to show up empty handed.  Homemade baking is a budget-friendly way to have a hostess gift on-hand that you can grab as you head out the door.  According to a recent survey conducted by Becel, 3 out of 4 Canadians agree that DIY gifts are more thoughtful than store-bought gifts and I tent to agree.  There is nothing worse then trying to come up with gift for family that you don’t know very well.  But trust me when I say I have never seen anyone disappointed when I show up at their door with a tin full of homemade chocolate chip cookies and other goodies ready for them to enjoy.

Foolproof Homemade Chocolate Chip Cookie Recipe

Ingredients

  • 2 1/4 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Becel® Buttery Taste margarine* or Becel® Original margarine
  • 1 cup Firmly packed light brown sugar
  • 1/4 cup Granulated sugar
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1 cup Chocolate Chips

Instructions

  • Preheat oven to 375°F
  • In a medium sized bowl combine flour, baking soda and salt and set aside.
  • In a large bowl beat Becel® margarine with sugars
  • Beat in eggs and vanilla into the sugar mixture until blended
  • Gradually add in flour mixture, beating just until blended.
  • Stir in chocolate chips and any other mix in’s (i.e. butterscotch chips, dried fruit, seeds, toffee bits, etc.)
  • Drop by tablespoonfuls on ungreased baking sheets, 2-in. apart
  • Bake 7 minutes or until edges are golden. Cool 2 minutes on wire rack

Now these cookies are fantastic just with chocolate chips – soft, chewy and oh so addictive.  But… you can also add in a variety of “mix in’s” to change things up a bit.  Why not try adding in 1/2 cup of butterscotch chips like we did?  For those with a sweet tooth you could also try adding in mini marshmallows or toffee bits.  If you like a more festive cookie, add in a cup of dried cranberries and some nuts.  With this Foolproof Homemade Chocolate Chip Cookie Recipe you can have a little fun and mix things up while creating some delicious cookies for you to enjoy (or giveaway!)
