Working full time and trying to keep the household under control can be exhausting. By the time I’m done work for the day I am tired, scrambling to pick up the kids from daycare and school so that I can get home and put dinner on the table at a decent time. It never fails the moment we walked in the door I am asked “Mom what’s for dinner?” “Mom Can I have a snack?” “Mommy…” Meanwhile I don’t even have my shoes or coat off yet. Coming up with dinner ideas that are easy to make and I can get to the table quickly is important. However I still want to make sure it is healthy food, and I do enjoy cooking. Luckily Kraft Canada has many 30 minute dinner recipes that you can make and get on the table in under 30 minutes. Now that is a working mom dream come true! These Tex Mex Potatoes are a great recipe to help you get dinner on the table fast.
We use our crock pot weekly to cook up roasts or chicken, but coming up with a variety of side dishes to go with dinner that are quick to make once we get home can be tricky. One of Hubs tricks is to cook potatoes in the microwave. It is WAY faster then the oven, usually less then 10 minutes compared to 40 or more in the oven. By microwaving the potatoes we save time on cooking and everyone can personalize their potato topping to create a side they love.
Easy Tex Mex Potatoes
- 4 Baking Potatoes
- 1/2 cup Salsa
- 1/2 cup Cracker Barrel Shredded Old Cheddar Cheese
- 1/4 cup sour cream
- 1 green onion chopped
- Prick potatoes in several places on both sides with a fork.
- Place potatoes on a paper towel or microwaveable plate. Microwave using the baked potato setting on your microwave or on HIGH 8 to 10 min. (until potatoes are tender)
- Cut crosswise slit in top of each potato. Fluff the centres with a fork.
- Top with cheese, salsa, sour cream and garnish with green onion

These sound really tasty. Never thought about adding Salsa to a baked potato but I like the idea!
I bake my potatoes in the microwave too but only for 5 mins, then I pop them in the oven to crisp up the skins a little. I love my baked potatoes. 🙂
