Easy Cottage Cheese Pancakes

As a mom of 3 young kids it can be easier to have a special meal that we make at home rather then trying to enjoy breakfast out at a restaurant and make sure everyone is sitting nicely, not spilling their drink or yelling across the table.  Plus breakfast in bed (for me not the kids that would be too messy) means I get to spend more time in my favourite place… my bed.  My love for bed only rivals my love for chocolate  🙂  This easy cottage cheese pancake recipe is simple enough that hubby can have the kids help out to make it while I sleep in  (ahhhh a girl can dream).
 
Made with simple ingredients these cottage cheese pancakes are sure to be a hit with the whole family. The Gay Lea Nordica Cottage Cheese makes these pancakes nice and moist which means they are perfect recipe if you need a make ahead breakfast option.  They reheat well and don’t dry out.  And as with all Gay Lea products the Nordica Cottage Cheese is made from fresh dairy from Canadian farms.  Keeping a tub of cottage cheese in your fridge is a great way to have a high-protein low-fat snack on hand for when hunger strikes.  Just pair cottage cheese with fruit for a snack and you will be satisfied in no time.

Although there is no sugar in this recipe, the pancakes have a great flavour.  And if you like sweet, like I do, a dusting of powdered sugar and syrup maple add just the perfect amount of sweetness.

Easy Cottage Cheese Pancakes - Brunch Recipe Idea

Ingredients

  • 1 tub Gay Lea Nordica Cottage Cheese 450g
  • 1 ¼ cups Flour
  • 1 tsp Baking Powder
  • 2 Eggs
  • ½ tsp Salt
  • ½ tsp Vanilla Extract
  • 2 tsp Cinnamon
  • Powdered Sugar and Maple Syrup Optional

Instructions

  • Mix dry ingredients in a small bowl, and set aside.
  • Combine cottage cheese, vanilla, eggs, and cinnamon in a large bowl, and mix with an
  • immersion blender until smooth and creamy. (You can also do a few seconds in the food
  • processor or regular blender).
  • Fold in dry ingredients, and stir well until evenly blended.
  • Heat a skillet on medium/high heat for a few minutes, spray a little nonstick oil on it, then drop
  • a large spoonful of pancake mixture in the middle. Cook for 2-3 minutes then turn over once browned.
  • Cook the second side until browned
  • Repeat for the rest of the pancakes
  • Serve with a dusting of powdered sugar and maple syrup. Enjoy!
These Cottage Cheese Pancakes will become a family favourite in no time.  Maybe if I drop enough hints they will be served to me in bed sometime soon!

    My daughter and I will make a salad, slam some cottage cheese on top of it AND THEN…some shredded cheese..then top with italian dressing …yeah, crazy household
