Weight Watchers Muffins – 2 Points

My husband and I decided that 2020 was the year that we were going to take back our health, you see we have been together 16 years this year and married for 6 years. We are highschool sweethearts so we have literally seen each other change from teens, to young adults to now in our 30s. With all the seasons of life we have found that while we were enjoying life, adventures and the convenience of things but we weren’t taking the best care of us and the scale has slowly been rising for years.

My brother is getting married in October and wants to lose weight to be in the best shape for his wedding so we decided to join and create a Weight Watcher Crew. Not only have we commited to eating healthier but we have also made commitments to exercise. So we are 5 weeks in and have lost a combined 26 pounds just by making lifestyle changes, while it is tricky to change habbits I think we are getting into the groove. One of my favourite recipes that I have found are Weight Watchers Muffins as you can still have a muffin within the Smart Point System.

Tim Hortons is a tricky place for me, as for years I would always order a large steeped tea with 2 sugar, 1 milk and a chocolate chip muffin a couple times a week.  I signed up for the Weight Watchers Program in early January and was assigned 23 Smart points a day based on my weight loss and fitness goals. My next visit to Tim Hortons I looked up how many points my tea and muffin were costing me…. gulp…. the truth was that my tea was about 6 points and my chocolate chip muffin was 18 points making that one meal 24 points which is my daily allowance of points.

Determined to still enjoy muffins as an easy snack or breakfast on the go, I went onto Weight Watchers connect looking for inspiration… and found a recipe from a member named Barbieb1, though I have slightly adapted it to create my own version using the ingredients I had at home.

This simple and tasty Weight Watchers Chocolate Muffin is low in points making it a great option. Five weeks into the program I have learned that I don’t want to blow all my points in the morning on breakfast as otherwise I am hungry for the rest of the day, however I am happy to ‘spend’ my points on these Weight Watchers Muffin Recipes.

Our whole family love these 2 Smart Point Muffins and were happy to use our points on them for breakfast. The exciting thing about this weight watcher muffin recipe is that there are endless changes you can make to combine different flavours and make multiple variations.

Weight Watchers Chocolate Muffins

These light and fluffy Chocolate Muffins, are made with apple sauce, cocoa and whole grain pancake mix and are just 2 Smart Points on the Blue Program. I love muffins for breakfast but I just couldn’t justify ‘spending’ the 18 points on the chocolate chip muffin from Tim Hortons no matter how much I love them!  These Weight Watcher friendly Chocolate muffins are just 2 Smart Points and satistfy my craving for muffins and chocolate.

Ingredients

  • 2 eggs
  • 1/8 tsp baking soda
  • 1/4 cup unsweetened cocoa
  • 2 tsp vanilla extract
  • 5 tbsp Stevia
  • 1/2 cup President's Choice Whole Grain Pancake Mix
  • 10g Hershey Mini Chocolate Chips
  • 1/3 cup apple sauce

Instructions

  • Preheat the oven to 350oF. Place muffin cups in a 12 hole muffin tin and set aside. 

  • Mix eggs, apple sauce, stevia, baking soda, unsweetened cocoa together.

  • Stir in the vanilla extract.
  • Slowly add small amounts of the President's Choice Whole Grain Pancake Mix, continue to mix.

  • Distribute mix evenly into 6 muffin cups.

  • Top the muffins with chocolate chips.
  • Bake at 350F for 18-20 minutes or until toothpick inserted in to the centre of the muffin comes out clean.
