Easy and Quick Meal Ideas: Egg Omelet Muffin and Potato and Ham Skillet

Breakfast for Dinner: Ham & Potato Skillet, Ham Omelet Muffin, Ham and Tomato Egg Breakfast Muffin Recipes

We all know all about the evening rush to get home, everyone fed and maybe even squeeze in a swimming lesson before bedtime, so why not have Breakfast for Dinner.  Having a cache of quick and easy meals is my saving grace when it comes to dinner time.  Walking through the door at night, Kate and Erin both have hungry kids on their hands who want to eat right now.  There is no time for fancy prep or long cooking times, I have at best 20 minutes to get dinner on the table before the meltdowns start. I have included three recipes that use similar ingredients and are another quick and easy meal idea that the whole family can enjoy – Ham and Potato Skillet, Ham Omelet Muffin or Ham and Tomato Egg Breakfast Muffin!

1) Potato and Ham Skillet Recipe

Eating breakfast for dinner is quite popular in my house as we all love breakfast foods, especially my daughter who loves eggs, bacon, ham, hashbrowns and toast… definetly some of her favourite foods. Another amazing option is a Potato and Egg Skillet.

Ham & Potato Skillet Recipe

Ingredients

  • 1.5 cups Maple Leaf Black Forest Ham diced
  • 6 Potatoes
  • 1/2 Onion diced
  • 1 tbsp Olive Oil
  • 341 mL Can of Corn drained
  • 1/2 cup Cheese I prefer Old Cheddar, grated
  • Pepper to taste

Instructions

  • Wash and pierce potatoes. Cook in the microwave until almost done (takes approximately 10-12 minutes but will vary depending on microwave and size of potatoes). Alternatively dice the raw potatoes and cook with 1 tbsp of oil in the skillet stirring frequently for 20 minutes until almost tender.
  • In the meantime dice ham and Onion into large chunks and place in skillet with olive oil over medium-high heat.
  • Once potatoes are almost cooked through, carefully dice them into chunks (they will be hot!) and add to skillet.
  • Add corn to skillet cook on medium-high heat for 5 minutes until everything is heated through and potatoes are finished cooking
  • Top with grated cheese, and enjoy!

2) Ham Omelet Muffin Recipe

Dinner time with littles is always tricky as they want dinner right away, so this is one of my quick dinner ideas that I keep up my sleeve that will help get food on the table even on the hectic days.  Hubs love omelets, so this Ham Omelet Muffin Recipe is perfect for whipping up a quick dinner and they reheat really well for breakfast all week long!

Ham Omelet Muffin Recipe

Servings 6

Ingredients

  • 10 Eggs
  • 1/4 Cup Milk
  • 1/4-1/2 Cup Maple Leaf Black Forest Ham diced into small cubes
  • 1/4 Cup Green Onion chopped
  • 1/4 Cup Red Pepper chopped
  • 1/4 Cup Cheese grated
  • Salt & Pepper to Taste

Instructions

  • Preheat oven to 350 degrees F and generously spray a 12 cup muffin tin with oil to coat. Makes 12 omelet muffins.
  • Beat the eggs, milk, and salt and pepper together in a medium size bowl or large liquid measuring cup
  • Fill the bottoms of your muffin tin (about 1/3 of each individual tin) with the ham, onion, and peppers
  • Pour over the egg mixture until each cup is 3/4 full or a little more (they will rise)
  • Sprinkle cheese on top of each cup
  • Place in the over and bake for 20-25 minutes
  • Allow to cool for 2 minutes and run a knife around the outside edge before removing from pan
  • Enjoy!

These are perfect served with a side of toast or home fries.  You could substitute many different “mix-ins” include mushrooms, roasted peppers, or tomatoes.  We made up a batch and Hubs ate the leftovers for breakfast all week long.  The Ham Omelet Muffins reheat well, just microwave them for 30-45 seconds or until heated through.  

 

3) Ham and Tomato Egg Breakfast Muffin Recipe

Hubs love omelets, he has one almost every day for breakfast.  However they do take precious time to prepare and cook when he could be getting a few more minutes of sleep (Yes every minute counts, I am the snooze button queen).  However now we can prepare breakfast for whole week in under 15 minutes, plus 20 minutes to cook!  This Ham and Tomato Egg Breakfast Muffin Recipe is easy to make and is Hubs & kid approved.

Ingredients

  • Enjoy!

Refrigerate the “muffins” for up to a week. Reheat in the microwave for 30-45 seconds or until heated through.  Hubs likes his with a little Franks Red Hot Sauce, and the kids enjoy dipping in ketchup.  You can customize your Egg Breakfast muffins by adding in different “mix-ins” including peppers, mushrooms, bacon or spinach.  These Ham and Tomato Egg Breakfast Muffins are a quick and healthy way to get the protein you need to start your day.

    This looks really good. My dad always loved Old Cheddar but I could never get used to it! My go to for a quick weekday meal that my son will eat is pasta.

    oh this looks so good. I can’t get my daughter to eat potatoes no how I may have to try this with her since ham is her favourite kind of meat… she’s a cheesaholic… this could work!

  3. Not only does school start soon but all those activities that the kids are involved in eg, swimming lessons etc. It is good to know that a nourishing meal can be put together in less than 1/2 hour
