I enjoy entertaining – I know to some people that makes me weird.  But I love getting together with friends and family, and have an amazing Hubby to help he tidy up afterwards.  Growing up I watched my Grandma host large dinners all the time for our family, and friends from her choir and church.  She made it look so easy, and her house was filled with laughter.  Now my dinners may not be as fancy as hers were, however they are still lots of laughs.  One of my “secrets” to hosting a great dinner is finding easy recipes that I can make ahead, but taste amazing.  This Easy Chocolate Peanut Butter Cheesecake Truffle Recipe fits the bill perfectly.  My love for cheesecake is no secret, just take a look at these cheesecake brownies, Reese Peanut Butter Cup No-Bake Cheesecake or Oreo Cookie Cheesecake. When I was planning our menu for our recent dinner party I let Hubs take the lead on the main, while I planned dessert.  As soon as I saw this Chocolate-Peanut Butter Cheesecake Truffles on the Kraft Canada website I knew they would be perfect.

Easy Chocolate Peanut Butter Cheesecake Truffles Recipe

Ingredients

  • 1 pkg 250 g Philadelphia Brick Cream Cheese, softened
  • 1/2 cup graham crumbs
  • 1/4 to 1/2 cup icing sugar depending on how sweet you want them
  • 1/4 cup Kraft Peanut Butter
  • 1 pkg. 225 g Baker's Semi-Sweet Chocolate, broken into small pieces
  • Sprinkles if desired

Instructions

  • Beat softened cream cheese in large bowl with an electric mixer until creamy. Mix in graham crumbs, icing sugar, and peanut butter.
  • Refrigerate for 30-60 minutes to firm up
  • Take approx 1 Tbsp of the mixture and roll into 1-inch balls. Place on a parchment-covered cookie sheet.
  • Freeze 10 min
  • In the meantime, melt chocolate in a shallow dish in the microwave on 50% power for 30 seconds. Stir and repeat until chocolate is completely melted.
  • Dip the cream cheese balls, 1 at a time, into melted chocolate, turning until evenly coated with chocolate. Remove with spoons, allowing extra chocolate to run off for several seconds. Place back on baking sheet.
  • Top with sprinkles and refrigerate 1 hour
  • Refrigerate 1 hour or until firm.
  • Store in the fridge in a sealed container
  • Enjoy!

If you like your truffles sweet, use 1/2 cup of icing sugar.  If you prefer to have the taste of the peanut butter and cream cheese shine then go with 1/4 cup of icing sugar.  Either way, there is no “wrong” way to make these Easy Chocolate Peanut Butter Cheesecake Truffles.

I used crunchy peanut butter, but you could use smooth if that is what you have on hand, and then chop up and mix in some peanuts for a little crunch.  These bite sized delights keep well in the fridge, just take out what you need for serving and save the rest for a treat later on.  Or refill the plate as they disappear.
