One-Pan Curry Chicken Basmati Rice Pilaf Recipe

 

I have been talking about the great Get Kids Cooking Challenge by Uncle Ben’s this week.  We have tried several of the Uncle Ben’s recipes and they have all turned out great.  Here is a recipe that we tried and the whole family loved: Curry Chicken Basmati Rice Pilaf.  one pan Curry Chicken Basmati Rice Pilaf Recipe

This one pan recipe was simple to make, and the kids loved it too.  A perfect way to introduce new flavours like curry to the whole family.   You could also include veggies like peas or carrots depending on what your family loves.

One-Pan Curry Chicken Basmati Rice Pilaf Recipe

One-Pan Curry Chicken Basmati Rice Pilaf Recipe

Ingredients

  • 3 Tbsp Curry Powder
  • 3/4 lbs boneless skinless chicken breast, cut into strips
  • 1 Onion diced
  • 1 Bell Pepper diced
  • 1/2 cup Carrots cooked and diced
  • 1 tbsp Olive Oil
  • 3/4 cup Chicken Broth
  • 1 pouch UNCLE BEN’S® READY RICE® Basmati Rice
  • 1 cup Plain Yogurt
  • 4 sprigs cilantro chopped for garnish (optional)

Instructions

  • In plastic storage bag, combine curry powder, chicken, onion, carrots and bell pepper. Shake well to coat chicken and vegetables in curry powder.
  • In a large pan, heat oil on high. Add chicken mixture to pan and sauté until chicken is almost done, about 5 minutes.
  • Add broth and rice to pan. Cook until most of the broth is absorbed, about 5 minutes.
  • Stir in yogurt until well combined.
  • Garnish with cilantro if desired, and Enjoy!

    I adore the photo of your son working in the kitchen and at such a young age too. None of mine were ever in the slightest bit interested – only that food got onto the table in a timely manner 🙂 Surprisingly enough 2 of my sons are now very good cooks – no idea where they got that from though 🙂

    This is such a great program! My kids love getting in the kitchen and learning how to cook! My DH is much more patient then I am! Its fun to see them enjoy vegetables and healthy food because THEY made it! lol
