Rhubarb and Apple Crumble Recipe

 

We are in the lull between the Pan Am and  Parapan Am Games in Toronto right now.  With the city still riding on the excitement and fun of the Pan Am Games it is the perfect time to try out some of the delicious recipes created by the Mississaugas of the New Credit First Nation (MNCFN), the Official Host First Nation of the games.  Chef Wolfman created several mouth watering recipes that were sampled all around Toronto on the #YouAreWelcome Food Truck.  I shared our experiences of being able to go out and taste the offerings of Toronto’s first First Nations Food truck.   The Ojibway cuisine was amazing, and has inspired me to give some of the recipes a try.  The Smoked Turkey Chili will be perfect for the fall, it is this Rhubarb and Apple Crumble recipe that has my mouth watering right now.

Rhubarb and Apple Crumble

Rhubarb and Apple Crumble Recipe

Ingredients

  • 2 Tbsp Lemon Juice
  • 1 Lemon zested
  • 3 cups Rhubarb chopped into 2 inch pieces
  • 3 cups Granny Smith Apples peeled, cored, and sliced into 1 inch wedges
  • 3/4 cup White sugar
  • 1/4 cup Flour
  • 1 tsp Cinnamon
  • 1 1/2 Cups Quick cook oats
  • 1 tsp Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/2 cup Flour
  • 1 cup Brown Sugar
  • 1 cup Butter cut into cubes

Instructions

  • Preheat over to 350oF
  • In a large mixing bowl mix rhubarb, apples, lemon zest, lemon juice, white sugar 1/4 flour, and 1 tsp of cinnamon. Place mixture in a 9x9 inch glass baking dish
  • In another bowl combine oats, 1 tsp cinnamon, cloves, 1.2 flour, and brown sugar.
  • Add butter to oat mixture and combine with your hands until the mixture is crumbly and forms pea size nuggets.
  • Spread evenly over the apple mixture.
  • Bake on a baking sheet for 35-40 minutes or until golden brown
  • Serve with whipped cream or ice cream. Enjoy!
